The Stallion ‘Sausage’ Fajitas

Yield: 4-6 servings

Is there a better noise that a hungry human can hear than a skillet full of sizzling fajita veggies coming their way? We think not! Recreate the magic at home with a No Evil Italian ‘Sausage’ twist.


  • 1 package The Stallion Italian ‘Sausage’ Links
  • 3 bell peppers (yellow, green, red), cut in strips
  • 1 yellow onion, sliced
  • 3 tablespoons olive oil, divided
  • Spice Mix: 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon ground cumin, 1 teaspoon garlic powder, 1 teaspoon Mexican oregano, salt & pepper (to taste)
  • Lime, wedged
  • Tortillas

Optional garnish:

  • Jalapeño, sliced
  • Red onion, diced
  • Vegan sour cream
  • Salsa
  • Cilantro, minced

The How-To

  1. Preheat your oven to 450°F.
  2. While oven is heating, chop all your veggies and slice The Stallion links into rounds.
  3. Toss veggies with two tablespoons of olive oil and the Spice Mix. Lay flat on a couple of baking trays, and pop them in the oven for 20-25 minutes, stirring halfway through.
  4. While the veggies are roasting, cook The Stallion according to package instructions.
  5. Take roasted veggies out of the oven to cool, warm your tortillas, then pile high with all the fillings and garnishes your hungry heart desires. Don’t forget a lime squeeze finish!
