Vegan Thai Chicken Red Curry Recipe Made with Comrade Cluck and RightRice

Thai ‘Chicken’ Red Curry

Yield: 4 servings

Curries are like the combat boots of the foodie world – they go with almost everything and have a good kick. 😉 We teamed up with RightRice to create a bomb Thai Red Curry with Comrade Cluck ‘No Chicken’ that you can make at home.

Ingredients

  • 2 tablespoons coconut oil
  • 1 white onion, diced
  • 1 1/3 cups vegetable stock
  • 1 package RightRice Thai Curry
  • 10 oz Comrade Cluck
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons ground coriander
  • 2 tablespoons red curry paste
  • 1 1/2 cup shredded carrot
  • 1 15 oz. can coconut milk
  • 3 cups spinach
  • lime zest
  • lime juice, to taste
  • cilantro for garnish

The How-To

  1. Heat a skillet over medium heat and add coconut oil to melt.
  2. Add diced onion to skillet and saute until soft, about 8 minutes.
  3. In a separate pot, bring vegetable stock to a boil. Add RightRice and cook according to instructions on package.
  4. In the skillet with the onion, add Comrade Cluck, garlic, ginger, and coriander. Stir together and continue cooking until Comrade turns golden brown.
  5. Add curry paste, shredded carrot, and coconut milk to skillet. Mix ingredients and continue cooking until carrot softens.
  6. Add spinach, lime zest, and lime juice to skillet. Allow spinach to wilt.
  7. Combine a scoop of cooked RightRice in a bowl with a scoop of the finished curry and top with cilantro.
