Sausage Squash Grill-Pockets

Serves 4

It’s like summer in a pocket! Fresh veggies, herbs and sausage get stuffed into a little foil pouch and then┬álaid on the grill or tucked into some burning embers under the stars – colorful & bursting with flavor.


  • 1 package of The Stallion, cut into 1/2-inch slices
  • 1 medium zucchini, cut into 1/2-inch slices
  • 1 medium yellow summer squash, cut into 1/2-inch slices
  • 1 medium red bell pepper, sliced
  • 1 medium onion, cut into wedges
  • 1 cup quartered fresh mushrooms
  • 1/4 cup olive oil
  • 2 tbsp fresh oregano, minced (or 1 tbsp dried)
  • 2 tbsp fresh parsley flakes, chopped (or 1 tbsp dried)
  • 3-4 cloves of garlic, minced
  • 1 teaspoon smoked paprika


  1. Combine all ingredients in a large bowl and toss well to combine and evenly distribute herbs
  2. Divide ingredients among four┬ápieces of heavy-duty foil (about. 14″ x 12″)
  3. Wrap foil around ingredients and seal tightly
  4. Grill over medium heat for 15-20 minutes, or until veggies are softened
  5. Open carefully to allow steam to escape and breath in that glorious herby goodness.
