Pear and Walnut Salad

A prim arugula salad with a radical streak, this salad gets a bold assist from The Stallion paired with crisp pears and crunchy walnuts. Screw the Waldorf.


  • 2 Stallion Links, cut on a bias 
  • 5 oz arugula 
  • ½ pear, cored and sliced 
  • ½ cup walnuts, chopped 

Lemon Vinaigrette: 

Yields: 1 cup 

  • ½ c lemon juice 
  • 2 T agave 
  • 1 c Extra Virgin Olive Oil 
  • 1 clove garlic 
  • ½ shallot 
  • Pinch of fresh parsley 
  • Salt & Pepper 

The How-To

  1. Add all vinaigrette ingredients (reserving oil) in blender.  Blend on low and slowly add oil to emulsify. 
  2. Brown sliced Stallion in oil over medium heat.  Flip once to brown on both sides. 
  3. Build salad: arugula, pear, walnuts, browned Stallion, and lemon dressing.
