Vegan chicken mushroom stroganoff made with No Evil Foods Comrade Cluck

One Pot ‘No Chicken’ Stroganoff

Yield: 4 servings

It’s a little bit indulgent and a lot bit delicious. Get your favorite pot ready because it’s about to go to work!

Ingredients

  • 2 1/2 cups  vegan chicken stock, divided (We used Better Than Bouillon) 
  • 1 tablespoon all-purpose flour 
  • 3 tablespoons olive oil, divided
  • 1 10oz package of Comrade Cluck 
  • 1/2 teaspoon kosher salt  
  • 1/4 teaspoon black pepper 
  • 12 oz. cremini mushrooms, sliced 
  • 1/2  yellow onion, finely chopped 
  • 1/2 teaspoon paprika 
  • 1/4 teaspoon dried thyme 
  • 1/4 teaspoon dried oregano 
  • 1/8 teaspoon red pepper flakes 
  • 3-4 cloves garlic, minced 
  • 1/2 cup dry white wine (We used a chardonnay) 
  • 8 oz. extra-wide egg-free ribbon noodles, uncooked
  • 1/2 cup vegan sour cream (more can be used if you want) 
  • 1 teaspoon whole-grain or Dijon mustard 
  • fresh parsley, chopped, for garnish 

The How-To

  1. In a small bowl, add all-purpose flour and 1 tablespoon vegan chicken stock and whisk to combine.  Set aside. 
  2. To a large Dutch oven or deep-bottomed skillet, add 1 1/2 tablespoons of olive oil and heat over medium-high heat.  Add Comrade Cluck pieces to pan, then sprinkle with salt & pepper. Cook 5 minutes, until golden brown.  Remove and set aside. 
  3. Add remaining 1 1/2 tablespoons of oil to the pan, and add sliced mushrooms and onion.  Add 1/4 teaspoon black pepper, paprika, dried thyme, oregano, and red pepper flakes.  Cook mushrooms about 6-7 minutes, until cooked and slightly golden.  Add garlic and cook 30 seconds, stirring often so it doesn’t burn. 
  4. Pour in wine, scraping the bottom of the pan with a wooden spoon to loosen any browned bits of flavor.  Cook wine about 2 minutes, or until reduced by about half. 
  5. Stir in remaining vegan chicken stock and bring to a simmer.  Once simmering, add remaining ½ teaspoon salt and ribbon noodles. Stir and cook, uncovered, 8-15 minutes or until cooked.  Stir every so often as the noodles are cooking to prevent sticking. 
  6. Pour in the stock/flour mixture you set aside earlier.  Stir, and cook 1 minute. 
  7. Turn off the heat.  Add in cooked Comrade Cluck, sour cream, and mustard. 
  8. Sprinkle with chopped parsley, and serve.
