Lemon Hummus Sausage Toast with Arugula and Pomegranate Seeds

Lemon Hummus ‘Sausage’ Toast

Yield: 4-6 pieces of toast

We blew our own minds a little with this combo of tangy lemon hummus, arugula, pomegranate, and savory slices of The Stallion. Bold, fruity flavors with Plant Meat? Just trust us on this one. 


  • 6 oz The Stallion, cut diagonally
  • 4 to 6 pieces of bread, toasted
  • 8 oz plain hummus
  • 1 lemon, zest and juice
  • 1 pomegranate
  • 1 oz arugula

The How-To

  1. Cook The Stallion according to package instructions. Set aside.
  2. Add zest of half a lemon and all of the juice to the hummus. Stir to incorporate.
  3. Cut pomegranate in half and smack hard on the back with a wooden spoon to separate seeds from husk.
  4. Build toast: 1 to 2 oz of lemon hummus, 1 to 2 oz crispy Stallion, a few pomegranate seeds, and top with arugula.
