No Chicken Kale Caesar Salad

Serves 4

Kale is king in this excellent version of Caesar Salad made with the Comrade Cluck and creamy cashew Caesar dressing. Pro tip: Double up on the dressing and cashew parm. You’re gonna want to put it on everything.


  • 10 oz Comrade Cluck
  • 1 c cherry tomatoes, halved
  • 4 radishes, sliced thin

Massaged Kale

  • 1# Kale
  • ¼ green cabbage, shredded
  • 1 T Extra Virgin Olive Oil
  • ½ lemon, juiced
  • Pinch of salt

Caesar Dressing, yield: 1 cup

  • ½ c cashews, soaked overnight
  • ½ c Extra Virgin Olive Oil
  • 4 t lemon juice
  • ½ T ACV
  • 1 clove organic garlic
  • 1 t mustard
  • ½ t salt
  • ½ t pepper
  • ½ T dulse flakes

Cashew Parm, yield: ½ cup

    • ½ cup toasted cashews
    • 1 clove garlic
    • 1 T nutritional yeast
    • Salt & Pepper

The How-To

  1. Massage kale and green cabbage with olive oil, salt, and lemon juice until slightly softened. 
  2. Drain and rinse soaked cashews. Combine all Caesar Dressing ingredients in a blender and blend until smooth.
  3. To make cashew parm, combine toasted cashews, garlic, and nutritional yeast in a food processor.  Season to taste with salt and pepper.
  4. Saute Comrade Cluck in oil until golden.
  5. Build salad: kale, cherry tomato, radish, Caesar dressing, crispy chicken, and cashew parm.
