Irish Nachos

Yield: serves 2

Swap waffle-cut potato fries for the usual tortilla chips, and you’ve got yourself a nacho platter that’ll knock your kilt off. Don’t be shy with those toppings!


  • 10 oz El Zapatista, crumbled
  • 20 oz frozen waffle fries
  • 8 oz canned black or pinto beans, rinsed
  • 3 oz vegan cheddar cheese (we used So Delicious)
  • 4 oz vegan queso (we used Vegan Valley Nacho)
  • 4 oz salsa or pico de gallo
  • 2 oz vegan sour cream (we used Ripple)
  • 2 green onions, sliced thin

The How-To

  1. Pre-heat oven according to package instructions of frozen waffle fries.
  2. While your oven is pre-heating, cook El Zapatista according to package instructions, then set aside.
  3. Bake waffle fries until crispy.
  4. Top fries with cheese, queso, beans, and El Zapatista.  Return sheet tray to oven for approximately 5 minutes or until cheese has melted.
  5. Top with salsa or pico, vegan sour cream, and green onions. Enjoy while hot!
