Curry Chicken Salad Lettuce Wraps

Yield: 2 quarts

A creamy, flavorful chicken salad, great on its own or wrapped in lettuce!


·        20 oz. Comrade Cluck (2 packages)

·        1 cup vegan mayo (We used Follow Your Heart)

·        ½ pound of celery, small dice

·        1 oz. green onion, sliced thin

·        ½ medium yellow onion, small dice

·        1 large green apple, small dice

·        1/3 cup slivered almonds

·        2 oz. golden raisins

·        1 tablespoon stone-ground mustard

·        2 tablespoon curry powder

·        1 tablespoon minced ginger (we used Ginger People)

·        1 tablespoon agave

·        Salt and pepper

·        1 – 2 iceberg or bibb lettuce heads

The How-To

1.       Brown Comrade Cluck according to package instructions, move to a paper towel-lined sheet tray to cool.

2.       Wash and cut lettuce to form cups.  Refrigerate until ready to use.

3.       Combine all of the remaining ingredients in a large bowl and stir to incorporate.  Adjust salt and pepper to taste.

4.       Build lettuce wraps, serve cold.
