Cuban BBQ Quinoa Bowl

Yield: 2 large bowls

Made with pantry staples and super easy to scale up, this is a great recipe for the whole family.


  • 1 package of Pit Boss
  • 2 cups quinoa, cooked
  • 1 bell pepper, chopped
  • 1 can Cuban style black beans
  • ½ medium yellow onion, small dice
  • 4 cloves garlic, sliced
  • 1 tsp Mexican oregano
  • 1 tsp cumin
  • 1 tbsp oil of choice

Mojo Citrus Sauce
Yield: 1 cup

  • ½ medium yellow onion
  • ¼ cup orange juice
  • 1 lime, juiced
  • 1 clove garlic
  • 2 oz fresh cilantro
  • 1 tsp cumin
  • ¼ cup extra virgin olive oil
  • salt and pepper to taste

The How-To

  1. In a small pot, saute onion and garlic to soften. Add can of beans, do not drain.
  2. Add Mexican oregano, cumin, and salt and pepper to taste.  Reduce heat to low, cover, and cook approximately 10 minutes.
  3. Mojo Citrus Sauce: Add all ingredients to a food processor.  Pulse until fully incorporated.  Adjust salt and pepper to taste.
  4. Cook Pit Boss according to package instructions.
  5. Build Bowls: quinoa, beans, Pit Boss, and raw bell pepper.  Top with mojo sauce. You’re done!
