Bowl of vegan coconut curry chicken ramen

Coconut Curry No Chicken Ramen

Yield: 1 quart

Your college days of buying ramen by the case may be over (are they?), but you can still enjoy a warm, brothy bowl full of wavy noodles! This recipe for Coconut Curry No Chicken Ramen is almost as easy to prep as the microwave version and loaded with flavor.

Ingredients

  • 10 oz Comrade Cluck
  • 1 – 3 oz package of ramen noodles
  • ½ cup yellow curry simmer sauce (We used Brooklyn Delhi Golden Coconut Curry)
  • ½ can unsweetened coconut milk
  • ½ cup water
  • 8 oz frozen stir fry veggies (We used Trader Joe’s)
  • ½ lime

The How-To

  • Cook Comrade Cluck according to package instructions. Set aside.
  • Over medium heat add simmer sauce, coconut milk, water, and ramen noodles. Cook 5 to 7 minutes until noodles have softened.
  • Add frozen veggies, cover, and cook 2 to 4 minutes.
  • Stir in prepared Comrade Cluck.
  • Remove from heat, and squeeze fresh lime juice over everything.
