‘Chorizo’, Smoked Gouda, & Spinach Waffles

Do you have a waffle maker in your cabinet collecting dust? Well, get ready to put it back into play because SAVORY WAFFLES ARE A THING, y’all. Find the details on how we made this spinach and smoked Gouda waffle topped with El Capitán ‘chorizo’ and fresh veggies below, but this one’s customizable… fold your favorite savory ingredients into the batter, cook it up, and voila: breakfast for dinner without the sugar-high insomnia.


  • 10 oz El Capitán chorizo 
  • 3 cups baby spinach leaves, shredded
  • 1 cup vegan smoked Gouda cheese, grated (We used Follow Your Heart slices)
  • 2 tablespoons chives, chopped
  • 1 batch vegan waffle batter (recipe below) 

Waffle Batter: 

  • 1  and 1/4 cup (156g) all purpose flour 
  • 2 teaspoons baking powder 
  • 1/4 teaspoon salt 
  • 1  and 1/4 cup (300ml) vegan milk 
  • 2 tablespoons neutral oil 

For Serving: 

  • Sriracha Syrup (equal parts Sriracha & maple syrup)
  • Extra chives
  • Vegan sour cream
  • Extra chorizo, as garnish 

The How-To

  1. Cook El Capitán according to package directions. 
  2. Make your Sriracha Syrup by mixing equal parts Sriracha & maple syrup. 
  3. Prepare waffle batter while your waffle iron heats up. 
  4. Add cooked ‘chorizo’, spinach, cheese, & chives to waffle batter and fold to combine. 
  5. Scoop about 1 cup of batter, depending on the size of your waffle maker, and cook for 6-7 minutes until crisp. 
  6. Repeat with the remaining batter. 
  7. Top waffles with sour cream, Sriracha syrup, extra ‘chorizo’, & chives!
