Cheesy ‘Chicken’ Burrito

Yield: 2 burritos

Who doesn’t love a good hug? Comrade Cluck gets a BIG one in this Cheesy ‘Chicken’ Burrito recipe! Tuck everything into a toasty tortilla and wrap it up tight for a tasty, warm meal you can take with you anywhere.

Ingredients

10 oz Comrade Cluck
1 cup rice, cooked (we used Uncle Ben’s Ready Rice)
½ can vegan refried beans
½ cup vegan shredded cheddar (we used Violife)
2 oz vegan sour cream (we used Ripple)
1 small tomato, seeded and diced
½ cup shredded iceberg lettuce
2 large flour tortillas

The How-To

Cook Comrade Cluck according to package instructions, set aside.
Steam flour tortillas in microwave to make it easier to wrap without tearing.
Build burritos: tortilla, refried beans, rice, sour cream, shredded cheddar, Comrade Cluck, lettuce, tomato. Fold bottom of tortilla up, then sides, and roll to secure.
Optional: secure seam by pan frying in 1 tablespoon of oil over medium heat, seam side down.
