Breakfast Sweet Potato Planks

Yield: Serves 2-4

Rise, shine, and rebel! Roasted sweet potato planks are the edible vessel for a righteous combo of smashed avocado, spicy radishes, and the fierce flavor of our plant-based ‘chorizo’. Don’t snooze on this gem.

Ingredients

  • 10 oz El Capitán ‘Chorizo’ Crumbles
  • 1 large sweet potato, peeled and cut into planks 
  • 2 large avocados 
  • ½ lemon 
  • 3 radishes, sliced 
  • Dash of red pepper flakes 
  • Oil of choice 
  • Salt & Pepper

The How-To

  1. Coat sweet potato planks in oil, salt, and pepper.  Lay on sheet pan in a single layer and roast for 20 mins at 375° F. 
  2. Crumble chorizo and sauté in oil over medium-high heat until browned. 
  3. Smash avocados, add juice of ½ lemon and season to taste with salt and pepper. 
  4. Build planks with avocado smash, crispy chorizo, radish, and red pepper flakes.
