Black Bean ‘Chorizo’ Burgers

It’s the veggie burger you’ve been waiting for!

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup chopped red onion
  • 2 garlic cloves, minced
  • 1/4 cup matchstick carrots
  • 1 package El Capitán ‘Chorizo’ Crumbles
  • 15oz can black beans, drained & rinsed
  • 1/2 jalapeño, minced
  • 1/2 tsp each: cumin, salt, smoked paprika
  • 1/4 tsp each: cayenne, fresh cilantro, panko

The How-To

  1. Heat olive oil in a large skillet over medium heat
  2. Add the onion, garlic & carrots. Sauté 2-3 mins until soft
  3. Add chorizo in small chunks and cook until browned
  4. Transfer chorizo mixture to large bowl and add black beans, jalapeño, cumin, salt, paprika, cayenne, cilantro, & panko
  5. Using a fork, mash it all together, leaving some beans whole
  6. Using the same skillet you cooked the chorizo in, add some more oil
  7. Form mixture into tight patties and cook them over medium heat about 3 minutes, or until browned
  8. Flip gently and cook until browned on both sides
  9. Place into buns or over greens & top with all your favorite toppings! (red/green cabbage, cilantro, caramelized onions, braised ramps, etc.)
