BBQ & Caramelized Onion Puff Pastry Bites

Yield: 12 count

For the day when you can’t choose between barbecue or baked goods, have both! Just fill, fold, and bake for a savory little pocket of Carolina BBQ your mouth will love.


  • 20 oz Pit Boss (2 packages)
  • 1 sheet of vegan puff pastry (We used Wewalka – 13.2 oz)
  • 2 large yellow onions, sliced thin
  • Oil of choice
  • Salt and Pepper

The How-To

  • Coat onions generously in oil and salt and pepper.  Sauté in a medium pot over medium-low heat for about an hour or until caramelized.  Occasionally deglaze with water, vegetable stock, or white wine to prevent from scorching the pan.
  • Preheat oven to 350 degrees F.
  • Use a rolling pin to flatten out dough a bit – you may need a bit of flour to prevent sticking.  Cut dough into 12 squares.
  • Fill each dough square with about a teaspoon of caramelized onions and 1 to 2 oz of Pit Boss BBQ.  Pinch together opposite corners of dough and roll to secure.
  • Bake approximately 12 minutes or until the dough is golden brown.
