BBQ Biscuit Bombs

Say hello to your new BFF: BBQ Biscuit Bombs. They’re quite the mouth-full (in title and in real life). Made with our Pit Boss ‘Pulled Pork’, some vegan mac, and a sugar sesame glaze, they’re savory and sweet, just like the end of summer.

Ingredients

  • 1 package Pit boss
  • 1/2 cup barbecue sauce
  • 1 box of vegan mac & cheese, prepared
  • 16.3 oz refrigerated can of biscuits (Pillsbury makes some accidentally vegan ones!)
  • 4 tablespoons vegan butter
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons vegan Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame seeds

To serve:

  • Coleslaw
  • French fries

The How-To

  1. Preheat oven to 375ºF. Spray a 9-inch round cake pan with cooking spray. Prepare boxed mac & cheese. 
  2. In a small bowl, mix Pit Boss with ½ cup BBQ sauce 
  3. Roll each biscuit round to about 1/4-inch thickness. Top each round of dough with pulled pork & and mac & cheese. Bring the edges of the dough together and pinch to seal. Place in pan seam-side-down. The biscuit dough is tough so you can really wrestle it around the fillings. 
  4. In a small saucepan combine vegan butter, brown sugar, Dijon mustard, Worcestershire sauce, and sesame seeds. Bring to a boil and spoon over biscuits. 
  5. Bake 25 to 30 minutes, until the biscuits are golden and cooked through. Check frequently because they can burn quickly!
  6. Serve with your coleslaw and fries on the side.
