A Roast for the Rest of Us

Each year, the President gives pardon to a lucky bird. This year, you’re that lucky bird as we pardon you from yet another boring holiday meal. Your Thanksgiving is gonna rule!


  • 1 cup white wine or vegetable stock, ‘Better than bouillon’ no-chicken base, or 4 cups full-flavored veg stock
  • 1/4 cup vegan butter or choice of oil
  • 1 shallot, minced (optional)
  • 1/2 cup AP flour
  • 2 tsp white miso
  • 2-4 tbsp nutritional yeast
  • salt & pepper (to taste)

The How-To

  1. Preheat oven to 350º
  2. Brush THE PARDON with olive oil
  3. Place THE PARDON in the center of a 9×13 baking dish
  4. Pour white wine or vegetable stock into baking dishCover dish with foil and bake 30 minutes
  5. Remove THE PARDON from the oven, take off foil(look out, it’s steamy in there!)
  6. Bake, uncovered, for 20 minutes
  7. Let stand for 5 minutes before slicing thinly with serrated knife
